Curry Cauliflower and Peanut Butter on Toast

This recipe can be done totally vegan, if you buy vegan bread or bake it yourself. Apart from that it’s a pretty healthy alternative to normal breakfast. This can naturally also be done as lunch, although it really needs to be served fresh, so it doesn’t really work as a lunchbox meal.
Curry Cauliflower and Peanut Butter on Toast
½ head of cauliflower cut into small “bouquets”
1 slice of toast (vegan or whole-grain)
1 apple
1 tbsp peanut butter
1 tbsp chopped and toasted almonds
1 tsp chia seeds
1 tsp ground cumin
1 tbsp curry powder
1 tsp chilli flakes
salt & pepper
oil

Start by mixing the cauliflower bouquets with cumin, curry, chilli, salt, pepper and oil. Make sure it gets a good coating.
Bake in oven for 12-15 minutes at 200 degress C. – 4oo degress F.
Toast bread and smear peanut butter on it.
Add cauliflower, then apple, almonds and chia seeds.
Simple and healthy.
