Mac & Cheese Rolls

These Mac & Cheese rolls are the bomb!

The fatty cheese rolls along side the salty sweat bacon-onion jam, work in perfect harmony. Try them – they are a real party pleaser.

Mac & Cheese Rolls (4-persons as snack or appetizer)

6 large tortillas

Mac & Cheese
1 cup macaroni pasta
1 cup whole milk
1 tbsp minced garlic
½ cup shredded cheddar cheese
½ cup shredded gouda cheese
½ cup graded parmesan cheese
pinch of grated nutmeg
salt og pepper

Bacon-Onion”Jam”
2 medium-sized red onions chopped into smaller pieces
1 pack bacon (6-8 slices) sliced into thin strips
1 tbsp. brown sugar
1 tbsp. whitewine vinegar

 

Start by browning off the bacon in a small pot. Add onion and give it some color. Then add brown sugar and vinegar and let it simmer at low heat, for at least 40 minutes, until the onions are desolved and it resembles jam.

Boil the macaroni by following the instructions on the pack. Discard the water and add garlic, and then milk. Add the cheese and nutmeg, salt and pepper to taste.

Heat up a grill pan with some butter. Spread the bacon-onion jam in the middle of each tortilla, and add the mac and cheese on top. Roll the tortillas and slice them into 2-3 bites per roll. Fry the bites shortly on the pan on each side, and you’re ready to go. Serve them along side a tomato soup, or with your favorite barbeque.
